Macaroni Casserole Recipe

This recipe is based on the recipe from the original 100 Days of Real Food book. We have made it a few times and have gotten the recipe how we like it. If you haven’t gotten the recipe book, though, I highly recommend it! After making this recipe, and knowing how much better it is for my family, I would never go back to boxed macaroni again.

Macaroni Casserole

  • 2 tbsp butter
  • 1/4 cup diced onion
  • 2 cloves garlic minced
  • 2 tbsp whole-wheat flour
  • 2 cups milk
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 cup sour cream
  • 2 1/2 cups cheddar cheese grated
  • 1 1/2 cups noodles cooked
  • 1 cup add-ins such as diced cooked green beans, steamed broccoli, frozen peas, shredded cooked chicken, etc.
  • 1/3 cup whole-wheat bread crumbs
  1. Preheat oven to 425
  2. Melt butter in a large saucepan over medium heat
  3. Add onion and cook for 3-4 minutes until soft
  4. Add garlic for another minute
  5. Sprinkle in flour and whisk continually until it browns
  6. Whisk in milk and bring to a boil
  7. Lower the heat and simmer until the milk thickens, stirring occasionally so it doesn’t burn
  8. Remove from heat and whisk in salt, pepper, sour cream, and cheese
  9. Add the noodles and add your add-in ingredient and stir until coated
  10. Transfer to an 8×8 baking dish
  11. Coat with breadcrumbs
  12. Bake for about 15 minutes until golden brown
