Pineapple Upside Down Cake Recipe

I love pineapple. I love cake. Pineapple upside down cake is the perfect mixture of both and oh so good! Especially when I make it with lots of extra pineapple!! Traditional pineapple upside down cake is made with cherries, but I don’t like cherries, so I just add more pineapple in place of the cherries. Did I mention I love pineapple?!

  • 2 tbsp butter melted
  • 1/3 cup brown sugar
  • 8 oz can pineapple slices drained and halved
  • 4 maraschino cherries halved
  • 1 1/2 cups flour
  • 2/3 cup sugar
  • 2 tsp baking powder
  • 2/3 cup milk
  • 1/2 cup butter softened
  • 1 egg
  • 1 tsp vanilla
  1. Preheat oven to 350
  2. Put melted butter in 9 inch round cake pan
  3. Stir in brown sugar and 1 tbsp water
  4. Arrange pineapple and cherries in the pan and set aside
  5. In a medium bowl stir together flour, sugar, and baking powder
  6. Add milk, softened butter, egg, and vanilla
  7. Beat with electric mixer on low speed until combined
  8. Spoon batter over fruit
  9. Bake for 30-35 minutes or until toothpick comes out clean
  10. Cool on wire rack for 5 minutes
  11. Loosen from cake pan and invert on a plate and serve warm
