Veggie Pizza is yet another family recipe. Again, I have no idea where it came from, but we have been making it as long as I can remember. I have seen other recipes for something similar online, but never anything exactly the same. I used to call my grandma once a month asking her for the recipe before I finally remembered to just write it down!
The original recipe was made using crescent rolls and pinching the edges to make a crust. I tried that a few times but found it much easier to just get the pizza crust in a can near the rolls. It doesn’t fall apart as easily and cooks a little better.
Veggie pizza is also great for getting some veggies in. It’s made with a ranch “sauce” on it, and fresh vegetables on top. It combines some of my favorite things, with a bread crust, ranch dipping, and the raw veggies. I can also use this to get my kids to eat some vegetables too. Score for mommy! - 1 can pizza dough refrigerated
- 8 oz cream cheese softened
- 1 cup mayonnaise
- 1/2 pkg ranch dressing powder
- 1/2 cup carrots chopped or shredded
- 1/2 cup broccoli chopped
- 1/2 cup tomato chopped
- any other desired vegetables
Spread pizza crust out on pan and bake as directed until golden brown
Meanwhile, mix together cream cheese, mayonnaise, and ranch powder
Once cooled, spread cream cheese mixture out on dough to edges
Sprinkle vegetables on top
Refrigerate and serve cold
